It's not really possible to do a day trip from Eleuthera to Exuma unless you charter a plane. To get there commercially, you'd have to fly to Nassau, then to Exuma. As far as I know there are no ferries or boats that make this a regular trip. Eleuthera is a long skinny island, best explored by car.
